4 salmon fillets (4 oz. each)
1 tablespoon of olive oil
1 jar Eat This Tomato Jalapeno Marmalade
1 bag of mixed baby greens
1 Fuji or Honey Crispy apple, diced
1/2 cup chopped walnuts
1/3 cup olive oil
2 tablespoons white wine vinegar
- Preheat oven to 375 degrees.
- Place salmon fillets on sheet pan and roast for 10 minutes.
- Remove sheet pan from oven and turn on broiler.
- Spread Eat This Tomato Jalapeno Marmalade evenly on top of salmon, and return pan to upper part of oven for about 5 minutes. Keep an eye on salmon during this time so as not to burn the marmalade.
